1. Nyonya Assam Fish (Recipe by Majorie Chiew) ( pasted je..)

Ingredients:
• 1 ikan siakap (800g)
• 60g dried chilli paste

To blend:
• 20g turmeric (kunyit)
• 20g galangal (lengkuas)
• 30g lemon grass (serai)
• 10g shallot
• 10g garlic

Cut into small pieces:
• 20g ladies fingers
• 20g eggplant
• 20g onion
• 20g tomato
• 10g belacan
• 20ml assam jawa juice
• 1 lime (squeeze for juice)
• salt and sugar to taste
Method
Clean the fish. Heat wok with a little oil and add all the blended ingredients, chilli paste and belacan. cook for five minutes. Add assam jawa juice, lime juice and cut vegetables (ladies fingers, eggplant, onion and tomato).

Steam ikan siakap until cooked. Pour the assam jawa juice on the fish. In a medium hot oven, bake the fish which has been steamed earlier for two to three minutes so that the sauce is absorbed into the fish. Serve fish with hot rice.

2. RESIPI SIAKAP MASAMMANIS

Bahan-bahan:

1 ekor ikan siakap
sedikit garam
sedikt tepung jagung
3 biji buah tomato – dipotong dadu
2 biji bawang besar – dipotong dadu
3 ulas bawang putih – dihiris
2 inci halia – dihiris
1/3 biji nenas dipotong dadu
4 sudu besar sos tomato
3 sudu besar sos cili
1/2 cawan air
2 sudu besar gula
sedikit garam
1 biji capsicum merah dipotong dadu
5 sudu besar minyak untuk menumis
4 cawan minyak untuk menggoreng (agak-agak tertutup saiz ikan)

bahan hiasan – sedikit daun bawang, daun sup dan bawang goreng

Cara Memasak:

1. lumurkan ikan dengan garam & tepung jagung. Panaskan minyak dalam kuali, goreng sehingga garing. Angkat, tos & hidangkan di dalam pinggan.
2. panaskan minyak didalam kuali, tumiskan bawang besar, bawang putih, halia, dan tomato sehingga naik bau.
3. masukkan air, sos cili dan tomato, capsicum dan nenas.
4. masakkan sehingga agak pekat, masukkan garam dan gula
5. setelah masak, angkat dan tuangkan ke atas ikan.
6. hiaskan dengan hirisan daun sup, daun bawang dan bawang goreng
